Does anyone know of any easy student cards to get? Specific requirements?
Also, do they require proof of enrollment?

My son got a first financial and an associates(now ciitbank) student card when he was a sr in high school (he was 18, though), so no proof of school was required, as I recall.

Wells Fargo offers student credit cards.

The only qualifications that I know of, is 1) NO DEROGATORY CREDIT ever reported and 2) enrollment in a college/university (proof may be required).

Wells Fargo uses a "point" system for approving student credit cards. Of course, if the student is employed, salary is taken into consideration. But the application also asks if they receive assistance from grants or parents, etc. Points are also given for the type of school attending. For example, a 4 year university will get more points than a 2 year community college student.

Initial CL is usually between $500 to $1,000. I've even seen one initially approved for $1,500. The most common that I've seen is $800.

That seems like a fair limit for a beginning student. They should probably get some practice with credit and its advantages, temptations and pitfalls. Under 1000 seems ok because it'll be enough for them to buy some things they want or need but it is isnt such a big limit that they'll get into any real trouble. It should also be an amount that their parents can pay for them in case of an emergency.
