SOL for written contracts in NC is 3 years. If i set up a payment plan for 5 years with an OC in an effort to stretch time until they sue, and in 3 years tell them to f*** off, can they sue me, if SOL is up?

Yes because every time you make a payment you are resetting the clock.

I have another SOL question - Do you go by the SOL on the original account if the OC sold it to a CA (Arrow), or do you have to go by the date Arrow shows the account opened with them?

Not sure if you are talking about the SOL for reporting or collecting.
