A medical collection company came back and verified, basically w/ a computer print out of what the service was for. Is this good enough? Is it within my rights to demand a copy of my signature for this service? And if so, do they have to come up w/ my signature in order to comply w/ the FCRA?

The only valid form of verification is a contract with your signiture. Hold out and demand this. Send a second Validation or even an estoppal letter.

No, no, no. VALIDATION requires a signature. verification can be a simple bill. The CRAs do verifications. You request VALIDATION from the CA.

Do this by CRRR 30 days after they signed the GC.

I did ask the CRA to show me proof of signature , but they refuse. That's why I'm doing it directly w/ the CA.

You asked the cra for proof of signature? Of course they refused, they don't have that, the creditor or ca has or should have that. If you have sent the validation to the collection agency and they haven't validated within 30 days, send the estoppel.
